Peanut allergies tend to be far more severe in nature than soy allergies. I am unsure of the reason for this discrepancy.
This process, though, can be applied to a broad swath of allergens. It stimulates a process called antibody class switching, the same process targeted with allergy shots. The difference is that with allergy shots, the target is conversion of IgE (allergy) to IgG (non-allergy). Oral immunotherapy mainly targets conversion of IgE response to IgM.
Research into this approach has been published in JAMA several times going back a decade or more (geez, has it been that long?). There is just more money to be made with a shots, so you know why that was advocated by the medical community.
